Nova Scotia has one of the coolest climates in the world to successfully grow wine grapes; the Champagne region in northern France does as well. Ideal conditions in the vineyard lead to minimal intervention in the winery. Nova Scotia has the perfect climate to create the harmonious sugar, acid balance required to turn our grape juice into wonderful “sparklers”! That balance is moderate sugars and strong acids. Champagne set the benchmark a long time ago for high quality sparkling wine made in the traditional method (the second fermentation, which produces the CO2 bubbles, happens in the bottle) with traditional grapes (Chardonnay, Pinot Noir and Pinot Meunier). The grapes are sourced from different growers in the Champagne region and blended mixing different vintages and varying ratios of the varietals. The result is a non-vintage Champagne that has a consistent flavor profile year after year and people are willing to pay high prices for that consistency and prestige. Nova Scotia has growing conditions that compare with Champagne, France. We usually produce estate grown, vintage and traditional method sparkling wines. In Champagne this boutique style is now becoming trendy and fetching even higher prices than their non-vintage, co-op style Champagnes. In Nova Scotia, we offer Champagne quality priced at great value for dollar! In this past year, Blomidon Estate Winery, Cuvée L’Acadie won Gold in the Canadian National Wine Awards and L’Acadie Vineyards, Prestige Brut earned Silver at Effervescents du Monde in Dijon, France. “Crémant” is made in traditional method outside of Champagne. It can be less carbonated (making it more creamy than fizzy) right up to full carbonation of 90-100 PSI (pounds per square inch). In Spain CAVA is also produced in the traditional Method using indigenous varietals. Italy produces non-traditional “Prosecco” from a grape of the same name, also a more lightly spritzed “Asti” usually with Muscat grapes. Nova Scotia also produces all of these non-Champagne styles.

The result of juice from grapes frozen and harvested at temperatures between -8 and -12C for at least 8 consecutive hours. Freezing concentrates the juice and its sugars to a drop of liquid gold in the center of the grape. Icewine started in Germany as “Eiswein”. Canadian winters are ideal for producing this style and Nova Scotia is unparalled. The freezing of grapes for icewine preserves a flavor profile that is more “Fresh Fruit“.

It is a wine and a region. The wine is sweet and the region is in Graves, South Bordeaux, France. Because of damp morning fog, mid-day clearing and drying, the grapes have a fungus called Botrytis cinerea which shrivels the grape and concentrates the juice and sugars to the center. Fermented, this juice becomes a sweet wine. Enjoy flavors of cooked fruit (baked apple, orange marmalade or apricot jam).

A sweet wine famous in Italy. In this case, traditionally the grapes are dried, on straw mats; again concentrating the juice and the sugars to the centre of the grape. Vin Santo tastes more nutty and honeyed.

L A T E   H A R V E S T

This happens in cooler climates, when the grapes ripen fully by being left on the vine and not harvested until late autumn or early winter once they have started to dehydrate. This happens at temperatures down to -4C. Known as “Vendange tardive” in France, we refer to them as “Late Harvest” in America.

  • Sweet wines can have their place all through your meal.
  • A low alcohol sweeter wine or a Fortified makes a brilliant apperitif to whet your appetite.
  • The sweetness of icewine and Sauternes or the crisp acidity of Vin Santo work wonderfully with briny oysters and a wine vingarette.
  • The acidity and texture of Sauternes paired with Foie gras creates a centuries-old classic.
  • Enjoy Lobster and other Shellfish with icewine or Sauternes with crisp acidity.
  • Salty blue cheeses and Sauternes is another classic pairing!
  • Dessert paired with sweet wines are great provided the dessert is less sweet than the wine.
